Quintana 30 is one of the few restaurants in the capital that specializes in traditional Basque-Navarre cuisine. A modern restaurant located in the district of Moncloa, just a few steps from one of the most famous museums of the city, the Temple of Debod. Angel Muñano, chef and co-owner of Quintana 30, and former member of the prestigious Goizeko culinary group, is in charge of preparing the best Basque and Navarre dishes such as the Bilbao-style baked Txangurro (spider crab), Pochas de Navarra with chorizo or ​​fish dishes such as cod loin pil-pil style (cod, chili peppers,olive oil and garlic), a classic Basque dish, and an oxtail stew prepared by traditional method and favoured by most meat lovers.
